Project Veltio has developed a novel patent-pending method for precision cooking and inventory management in professional kitchens.

The system comprises food capsules and a connected cooking device with smart sensing and control capabilities that are fully programmable and accessible through a touch screen.  The cooking method implemented by the device is based on the principles of molecular gastronomy and thermodynamics. The device cooks fast and evenly across a food portion (optimal for meat, poultry or fish), delivering the desired balance between internal and external texture every time. In parallel, the use of the food capsule system within the processes of food production and storage unlocks entirely new opportunities to bring operational efficiency in inventory management.
